Ionone is a terpenoid which has three isomers according to the positions of double bonds. The ketone belongs to rose ketone and is found in a variety of essential oils including rose essential oil. Beta violet is a major contributor to rose aroma, although its content in essential oils is relatively low. Violet is an important spice chemical used in perfumes, spices and condiments. Violet is the source of carotenoid degradation in organisms. Carotene, including alpha-carotene, beta-carotene, gamma-carotene, lutein and beta-cryptoxanthin, contains the structure of beta-ionone, has the activity of vitamin A, they can be converted into retinol in animals. The carotenoid without beta - violone can not be converted to retinol, and has no vitamin A activity.
