Glycine aminoacetic acid, short for Gly or G, is the smallest of the 20 protein amino acids. It is white or light yellow crystal, soluble in water and sweet. The lateral bond of glycine is a hydrogen atom. Because its alpha carbon also has a hydrogen atom, glycine is not optical isomerization. Because the glycine side bond is very small, it can occupy space that other amino acids cannot occupy, such as amino acids in the collagen helix. In some proteins (such as cytochrome, myoglobin, and hemoglobin) it changes fairly little with evolution, because the structure of the whole protein changes if a larger amino acid replaces it. Most proteins contain only a small amount of glycine, an important exception being collagen, which contains a third of glycine.
